Man, I'd have to say its a tie for me between:

Han Solo

I'd have to say that sticking to the movies my choice would be Yoda cause he's awsome. "Chose another favorite, thou shall not!"
If i could chose any character from any of the offshoots it would be HK-47 from the Knights of the Old Republic game...he's an awsome character with one of the most unique personalities I've seen in a Star wars character.
