For the big open area, you can use something like Anvils tree circle.
For religious buildings, I think you should, but I know nothing about
the lore.

For a religious building I think it would be best to make it part of the castle.
I don't want you using the vernim wood inn, even with a retex. There is
plenty of buildings that are already there you could use as
inns/taverns.
I would also like to add that Zarf is still making a gate, which has to be in the southern part of Riften.

It already has an interior (and a nice one at that) it would be a shame to throw it away.
The gate at the moment is a placeholder

Sorry it has to go to waste, but really if there wasn't guidelines and
things such is this Riften would still be built in Bruma, fort tileset,
Stock OB lower class and the the Riften set, sucking uniqueness out of
every where.

If you can name a suitable lower class building that will match the
Riften set without using one that is already being used as a tavern
within Riften, I will happily use it

I have 1 lower class tavern using the 1SKxxAAxRiftenLC7 Mesh, it must
be a lower class mesh in the RiftenLC set and have enough room for
three bedrooms. |

But like you said you already have an LC tavern, why not have a UC or MC tavern?

I think some trees or a small park with benches etc. would be cool at the southern gate.

Will there be a playerhouse in Riften... I should maby have made more
background search before posting this but its such a quick question..

Yep. I made a Tower for Sale ages ago. Check out the thread in the
Riften Claims section of the forums. Plenty of pics and .esps (though
the pics are pretty small...)

Well, the castle's done as far as the exterior goes (you can see it on
the map and in screenies.) The UC district is also done(the thing you
first see when you enter Riften, just east of the castle.)
They were the original interiors Seigfried put up in the Riften Claims forum. I'm not too sure about castle interiors though.

The UC district has changed a bit since those claims were put up, new
claims probably need to be put up and some of the current claims need
to be reworked slightly. |

It's on the heightmap. Alasdair tried merging the interiors in the last
master file but some where buggy (not sure of the specifics.) No AI yet
and hardly any NPCs AFAIK.
