This may be a stupid question, but if I make a good model for one of these, do I need to UV map it, or would it still be helpful to yu if someone else had to UV map it?
Not really, no. Modelling and mapping usually go hand-in-hand, as mapping a model is much easier and turns out better if the mesh is created with the mapping it'll use in mind. It would be very complicated to explain how to do it to someone who may be altogether unfamiliar with mapping models.
The best way to learn how to design a mesh so it fits with mapping is to practice, but a real treasure trove is examining Bethesda's meshes. Particularly the ones from TES3, which in my opinion are more complex than the ones in TES4, despite the latter are more high-poly. One can really see the attention to detail the company's old modellers spent on their work.
